We found that both methods produced cinnamon with a pleasant aroma. However, when we evaluated the texture of the cinnamon powders, we found that grinding resulted in a smoother powder than grating. This smoothing effect did not appear to negatively impact the overall flavor of the cinnamon.
Grating cinnamon is better than grinding it. Grating produces a more intense flavor because it exposes the maximum surface area of the cinnamon bark. The resulting powder of grated cinnamon has more flavor and aroma than when it’s ground into much smaller particles.
There are at least four different ways to grate your cinnamon sticks:

Using a Box Grater
Here’s how to grate cinnamon sticks using a grater:
